Sunday Roast with Chicken


Ingredients:

Skin potatoes and cut them in chunks.

Boil potatoes first for a few minutes before roasting in an oven.

Ingredients:

frozen rasberries

Jelly mix

hot water


Just mix them together and cover it up to cool down, and put it in the fridge over night.

I made green salad, and salmon asparagus roasts for lunch for my family and parents in-laws. Everybody liked it.

I made chickpea curry this evening.

It was good. Family feedback - add curry powder and more tomatoes next time.

Ingredients as below. Added some coriander before serving.

Lentil soup

I cooked it for lunch. My wife taught me this.


Ingredients for 4-5 people

carrots x 4

small parsnip x 1

onion x 1

herbs

shiitake dried mashrooms x 3 or so

vegetarian stock

red lentils

salt and pepper


  1. Fry chopped onions in a pot
  2. Add chopped carrots and parsnip
  3. Add vegetarian stock in hot water.
  4. Add herbs, salt and pepper
  5. Wash red lentils in a colander
  6. add them into the pot
  7. Cook it with a lid on for a while until vegetables are soft.
  8. Blend it and done.

I made a Japanese omelette rice this lunch time. It was nice.

  • left over rice fried with peas and onions and vegetable stock.
  • omelette and ketchup on top.
